LEARNING TO MAKE CIDER
I had the good fortune of being mentored by Eric Bordelet in Normandy, where I observed the full cycle of cider production, from picking the fruit to bottling the cider. With Eric’s advice, I returned to Scotland and set out to create Novar Cider from scratch.
I have always admired the craftsmanship of distilleries in the Highlands of Scotland. The ambition of craft brewers and micro-distilleries who strive for perfection is a quality I look up to and put at the forefront of cider making.

PASSION FOR COOKING
I have always enjoyed cooking and I hope many of you reading this will try some of the recipes on this website. Special mention should go to Niklas Ekstedt's book Food From the Fire, which first inspired me to add my cider into recipes.
